Have you ever asked what else you can do with a tortilla? You know, nachos, burritos, tacos… But we also want to try something different, like making little baskets we’vefilled with turkey. However, you can fill them with any other favorite protein: ground beef, chicken, tofu, the options are endless.

INGREDIENTS

Traditional tacos are usually made with regular taco seasoning but in this recipe we’ll use a pesto sauce made with dry tomatoes, nuts, Parmesan cheese, basil, olive oil salt and black pepper. This pesto will provide good flavor and texture to our ground turkey that has been previously saute with salt and pepper.

To make the taco baskets you can use corn tortilla to make them gluten-free or you can use flour tortilla.

HOW TO MAKE TURKEY TACO BASKET

There are a few steps in this recipe, they’re totally worthy for getting the perfect fragrant and flavorful meal.

  • Cut the round tortillas in squares and use a cupcake baking sheet to form the baskets and bake them for 7 minutes. (For more details, check the recipe card at the end of this page).

Tip:

If you decide to make the basket with corn tortilla, it could happen some of them break apart on the bottom, fix them just putting some pieces from the leftovers.


  • Season the ground turkey with salt and pepper to taste and toss it in a pan with oil and on medium heat.
  • Blend dry tomatoes, nuts, basil, olive oil, Parmesan, salt and 3 table spoons of water to make pesto of tomato.
  • Add the pesto to the ground turkey and mix well. Let all the flavors blend well.
  • Fill the taco baskets with the mix and garnish with guacamole some cut basil and dry tomatoes. Enjoy!

Ingredients
  

  • 1 package flour tortilla or corn tortilla
  • 1 lb ground turkey
  • salt and pepper to taste
  • 1 tbsp olive oil

Tomato Pesto

  • 4 oz dried tomatoes
  • 2 tbsp chopped fresh basil
  • 1 garlic clove
  • cup mix of pecans and walnuts
  • cup olive oil
  • cup Parmesan cheese
  • salt to taste
  • 3 tbsp water

Guacamole

  • 1 avocado
  • ½ of a lemon juice
  • 1 garlic clove minced
  • salt to taste

Instructions
 

  • Preheat the oven to 350°F (180°C) grease a baking sheet for cupcakes. Gently shape the tortilla down around the sides and press to form the basket around the sheet. With the corn tortilla could happen to get some breaks on the bottom of the baskets, use the leftovers to fix them.
  • Bake the baskets for 7 minutes.
  • In a pan with olive oil, toss the ground turkey and add salt and pepper to taste. Saute for 5 minutes stirring and breaking into small pieces with spatula often.
  • In a blender, pour dried tomatoes, basil, nuts: pecans and walnuts, Parmesan, olive oil, garlic clove and water. Mix until getting a paste.
  • Add tomato pesto to the ground turkey and mix. Turn the heat low and let the flavors combine well during 3 minutes.
  • To make the guacamole, mash the avocado in a bowl with a half of a lemon, garlic clove and salt to taste.
  • Fill the basket with the turkey mix and garnish with guacamole, chopped basil and dried tomato. Enjoy!

Notes

* You can replace  ground turkey for ground beef, chicken, tofu or any other protein of your preference.
*Don’t let the turkey to stay very long on the heat, we want to keep the juices of the meat. Leave it until you don’t see the pink color anymore.
