About Me

Hello friends, my name is…

I am from Colombia and came to the United States as a third grade school teacher.  While I love my students and my job, I also share a great passion for cooking and creating delicious and healthy recipes.  I like to include all eaters, and I enjoy preparing traditional dishes as well. 

As a foreign teacher here on a work visa, I had the enjoyment of sharing my culture in public schools for 5 years.  During my fifth year in the United States, I met my wonderful husband Roddy.  This January, we will be celebrating our first year of marriage!  I will tell you all, it is a beautiful love story that I will share at some point soon in my blog. As for now I will say, it is a story that I had always dreamed, that I asked many times for.                                                          

                                                                                                                                                             

Our Goal

Since I have been a child, I long have had an interest experimenting in the kitchen and preparing recipes to share with my family.  This is the heart of the Sunshine Kitchen, to celebrate love by gathering our family and friends to a table as we enjoy delicious, healthy and traditional food.     


My passion for cooking

The healthy recipes take on a little more personal detail than I would like, but here it is.  When I was a teenager, I started having eating disorders that brought a hormonal imbalance, and ultimately, I had to be treated with medication. Those medications had a negative effect on me. Eventually, It made me to decide between a healthier diet or a long-term dependency on medicines.  Since that time, I decided to watch more closely as to what I should eat, so not to poorly affect my metabolism or body.  It has been a difficult journey learning to replace cheese and dairy because, if I have any weaknesses for food, it’s cheese!  Yum!  Of course, I still eat it occasionally, but my overall health became my personal priority.


Looking for healthy alternatives

I also love to bake with gluten free flour and non-refined sugar.  I have researched on how sugar and gluten can affect our digestion and the hormone balance for some women. Especially when they are over 40. I know the challenges of trying to find yummy desserts that do not use regular ingredients. Believe me, I have had my failures trying to find the right healthy recipe to replace a tasty dessert, which otherwise can not stand comparison with a traditional one! My purpose here is to create and continue preparing recipes that turn out well, and will be enjoyable.


All our eaters are important

This blog will often feature desserts and dishes using alternative ingredients that would make exceptional substitutions to regular ingredients.  However, as I have said previously, I will also include eaters who prefer to eat them using traditional ingredients.  In my own house, I cook for my husband who enjoys eating my healthy food, but I know he truly loves eating the traditional dishes as well.

The Sunshine Kitchen is eager to share mostly healthy recipes including traditional recipes as well and while respecting the preference of any eater that visits this website.  We welcome everybody who discusses kindly and respectfully.
