The Sunshine Weekend Waffles are a must have for weekends! This recipe has become a tradition for my husband and I during the weekends. The spongy texture, softness and savory taste makes this recipe a favorite for our weekends!

These Weekend Waffles have been prepared with gluten-free flour and refined sugar-free sweetener. No better way than to begin the day with a nutritious breakfast.

You can serve the Weekend Waffles with berries, maple syrup, butter, Creamy Almond Butter or my Four Steps to Homemade Nutella . They are also pretty good spreading some of my Homemade Medley Jam that you can download on my Free Recipes. you also can serve them plain! This recipe is so versatile, add your own creativity to shine in the kitchen!

These Weekend Waffles are so easy and quick to make. You only need 10 minutes or less to prepare them!

Ingredients needed for the The Sunshine Weekend Waffles

Flour: You can use a combination of gluten-free flour or all purpose gluten-free flour. If you decide going for the all purpose gluten-free flour, you will have to add 1/2 teaspoon baking powder.

Sugar: Refined sugar-free sweetener is my choice to make these Weekend Waffles but you can use the sugar of your preference.

Salt: A pinch of salt will balance out the sweetness of our waffles.

Oil: For this recipe I am using unflavored coconut oil.

Milk: I use oat milk but you can use any milk you have handy.

Egg: I am using a large egg.

Flaxseed: A re-boost of omega3 is always good! 😋

Rolled oats: The rolled oats add some fiber to our delicious Weekend Waffles.

How to store the leftovers of the Weekend Waffles

Put the Weekend Waffles in a zip lock bag and store in the fridge for 2-3 days. They also can be stored in the freezer for about 3 months.

To warm your waffles, popping them straight to your toaster oven or turn your oven to 220F to warm them there too. You also can use a saucepan and heat it in low/warm temperature.

Ingredients
  

  • cup gluten free flour save 1/4 for later
  • 1 tbsp refined sugar-free
  • 2 tbsp flax-seed optional
  • 3 tbsp rolled oats optional
  • 1 large egg
  • 3 tbsp unflavored coconut oil
  • cup alternative milk
  • 1 pinch salt

Instructions
 

  • Preheat waffle iron.
  • In a bowl, mix all the dry and wet ingredients. Whisk them well. Then, add ¼ of gluten-free flour you saved from the beginning. Blend all the ingredients well until you get a consistent mix.
  • Scoop the batter in the preheated waffle iron and cook until the waffles are golden brown and crisp.
  • Serve with your favorite toppings. I used berries, maple syrup, powered sugar-free sweetener and butter.

Notes

*For my waffles instead of using maple syrup, i used coconut nectar.  It is a low glycemic sweetener.
