This Roasted Pear Salad with Herb Goat Cheese and Walnuts is the ultimate appetizer or salad if you serve it over a bed of fresh arugula. A very simple recipe you can enjoy at any time of the year.

You never have a specific season to enjoy a good salad with magic combinations that pair well among flavors. However, I’ve chosen to make this delicious recipe with pears to celebrate the close of a year and the beginning of a new one.

And it’s that, among other things, Chinese people consider this fruit as a symbol of longevity that although its flowers suggest fragility, they grow into a strong tree capable of withstanding the harshest droughts.

You might be thinking I’m nuts or out of context. Lol… But this is my best way to thank for all the challenges we’re able to overcome during this year and still be standing.

A simple yet impressive salad is the perfect addition to any meal. We love serving these roasted pear salad with a stuffing of garlic herb goat cheese and walnuts before they’re baked with Dijon mustard and honey dressing that will provide that subtly sweet and sour taste.

The concept is easy, but it’s all in the texture and flavor combinations.

Ingredients
  

  • 2 pears ripe, sliced lengthwise into halves.
  • 4 oz goat cheese garlic herb
  • ¼ cup walnuts chopped
  • 6 oz arugula leaves
  • fresh rosemary
  • 2 tbsp maple syrup drizzling

Dressing

  • 4 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • ¼ tsp garlic powder
  • sea salt and black pepper to taste

Instructions
 

  • Preheat the oven to 375 degrees F.
  • Cut your pears in half lengthwise. Scoop out the core and seeds and with a spoon take a little part of the center.
  • fill each pear with about 1 rounded tablespoon of the goat cheese and top with walnuts. Drizzle with maple syrup. and some of the mustard and honey dressing. Then top with rosemary.
  • Place the pears onto a baking sheet with a rack to avoid the pears get burned.
  • Combine in a small bowl olive oil, Dijon mustard, honey, garlic powder, salt and pepper and whisk. Drizzle the pears over the rosemary.
  • Place the baking sheet onto the center rack of your preheated oven and bake for 25 – 30 minutes or until the pears get a golden color and the cheese looks melted.
  • Remove from the oven and place them on a bed of of arugula previously drizzled with mustard and honey dressing. Pour a little more of dressing over the pears and serve.
