Ingredients
  

  • 84 gr fresh basil washed
  • cup fresh parsley washed
  • ½ cup cashews you also can use pin nuts, peanuts, peeled almonds.
  • 1/4 cup olive oil extra virgin
  • 2 garlic cloves minced
  • 1 pinch sea salt
  • 1/4 tsp black pepper
  • 1 lemon

Instructions
 

  • In a blender, combine the basil, parsley, cashews, olive oil, garlic, lemon juice, salt and pepper and pulse until everything is well chopped.
  • Serve the pesto salsa with your favorite pasta or use it to flavor your favorite zucchini noodles' recipe.

Notes

*You can store your pesto sauce in a glass or airtight container.  The sauce will last in the fridge for about 1 week.
*You also can store your pesto sauce in ice cube trays and freeze it.  It will last in the fridge for up two moths.

Pesto has become the favorite one for many gastronomy lovers. This Italian sauce strikes that rare balance between boldness and tastiness.

The Sunshine Kitchen has inspired on this delightful Italian sauce and we have made our own pesto recipe.

We have called to our sauce, Pesto alla Sunshine Kitchen that still keeps the nutty+olive oil+fresh herbs flavor.

For this recipe, I am using the citrus juice of a lemon and I am excluding the Parmesan cheese. It is so delicious!!

Its flavor can be used in many dishes not only in pasta. You can use it as a sauce for your zucchini noodles or to spread on your bread. It matches well with chicken or turkey hamburgers and Mediterranean pizza. The ideas of how to use this fantastic sauce are infinite!

One of the most known version of pesto sauce is from Ligurian, a region in Northwest Italy whose main city is Genoa.

For Ligurian, this sauce has become a staple in their culinary tradition. Many families make its own pesto recipe that has slightly differences to the traditional ingredients.

DIFFERENCES BETWEEN CLASSIC PESTO SAUCE AND THE PESTO ALLA SUNSHINE KITCHEN.

  • To prepare an authentic Pesto alla Genovesa requires a marble mortal and pestle. The traditional ingredients are basil, extra virgin olive oil, garlic, pine nuts, parmessan and coarse salt.
  • To prepare Pesto alla Sunshine Kitchen you will need a blender to mix all the ingredients: basil, parsley, extra virgin olive oil, garlic, the juice of a lemon, cashews (but you also can use pine nuts) and sea salt.

  • Wash your herbs well. I soak mine in white vinegar with water. For a half cup of white vinegar you will need 1 cup of water. Let it sit for 5 minutes or more.
