This Moneditas de Plátano are packed with prebiotic fiber which is good for your gut. Plus, they’re crunchy, salty, delicious and easy to make!

I grew up in a place where you see green plantains everywhere. So, I jumped of happiness when I found green plantains around the place I live. It brought me back good memories from my roots, from my beautiful country, Colombia!!

There’s a variety of recipes and names you find with green plantains but today, I want to share this Moneditas de Plátano which is a simple recipe that only needs a couple of ingredients and 10 minutes to be ready!

This healthy snack is a great swap for potato chips, they just need a touch of oil if you make them in the air fryer, but if you don’t have one, no worries, you also can make this snack in the oven!

The ingredients you need to make this version of moneditas are basic. All what you need is green plantain, (of course), salt, garlic powder, black pepper and smoke paprika. You probably have them all in your pantry. However, if you don’t have these spices on hand, you can use any other ones you have right now.

STEPS TO MAKE MONEDITAS DE PLATANO

  1. Carefully remove the peels from the plantains by cutting off the ends, making a slice into the center of the plantain peel, and peeling it back.
  2. Use a sharp knife carefully slice the plantains into 1/8″ slices.
  3. Combine plantain slices, olive or avocado oil, garlic powder, black pepper, salt, dry oregano, smoked paprika in a bowl.
  4. Put in the air fryer for 7 minutes.
  5. Serve with a salsa of your preference or guacamole.

SWAP FOR BAKING

  1. Follow steps from 1-3
  2. Place parchment paper on a cookie sheet.
  3. Bake 425 F in the oven for 10-20 minutes, or until crispy. Rotate once or twice to cook evenly.
  4. Serve with a salsa of your preference or guacamole.

FINAL TIPS

  • Cut thin and even slices, this will ensure they cook evenly with a crispy texture.
  • Do not gather the sliced plantains in the air fryer but place them separately from one another. Doing this will avoid uncooked and soft chips.
  • The greener, the better.

HOW TO STORE THE PLANTAIN CHIPS

Best when fresh. Store leftover plantains in a sealed container in the refrigerator for 1 day and reheat on the stovetop or in the oven until warmed through. Not freezer friendly.

Ingredients
  

  • 2 green plantains
  • 1 tbsp avocado oil olive oil, coconut oil
  • ½ tsp dry oregano
  • ½ tsp smoke paprika
  • ½ tsp garlic powder
  • salt and black pepper to taste

Serving (optional)

  • 1 avocado
  • 1 tbsp fresh lemon juice
  • ½ tsp crashed red pepper
  • salt and black pepper to taste

Instructions
 

  • Carefully remove the peels from the plantains by cutting off the ends, making a slice into the center of the plantain peel, and peeling it back.
  • Using a sharp knife carefully slice the plantains into 1/8″ slices.
  • In a bowl, toss the plantain slices with oil, paprika, dry oregano, salt and pepper and stir well.
  • Place the plantain chips in the air fryer to 380°F for 7 minutes or until brown golden.
  • To make the avocado sauce, mash the avocado and add all of the ingredients and mix well.
  • Serve with your favorite salsa or guacamole.
