Easy Chicken Quesadillas Recipe

These Chicken Quesadillas combine the perfect flavor of Mexican food; fresh veggies, double cheese, crispy tortilla and chicken, seasoned with fresh herbs and some hot spices. This quesadilla recipe is great for an easy lunch or quick supper! Who can say not to delicious chicken quesadillas?

My husband loves Mexican food and if it’s hot, it is much better for him! I do like Mexican food as well! But I finish making certain adaptations because I don’t use to eat that spicy.

However, this recipe comes with everything a Mexican food should have. Yes, baby! Spicy over spicy!!

INGREDIENTS FOR THE EASY CHICKEN QUESADILLA RECIPE

Quesadillas can be filled with just about anything. You can be creative and use what you have right now in your fridge! Today, I will share our Easy Chicken Quesadilla Recipe.

Chicken- I cut fresh chicken breast in chunks but you also can shredded a roasted chicken and save time, if you want.

Flour Tortilla- I used burrito size. It’s much easier to keep all the filling inside when I make the quesadillas with it.

Seasoning- a combination of cayenne, black pepper, cumin and salt + fresh thyme and oregano, add lots of flavor to the chicken and indeed to quesadillas!

Veggies- Peppers, onions, lettuce, cilantro. You can choose the pepper you like. I used green onion for seasoning the chicken and the red onion to fill the quesadilla.

Cheese- I used slice Swiss cheese and shredded Mozzarella but you also can use pepper jack cheese or mild provolone.

HOW TO MAKE EASY CHICKEN QUESADILLA RECIPE

  1. Fry the chicken with the spices mixture, fresh herbs and onions.
  2. Assemble the quesadilla putting the veggies in a quarter part of the quesadilla, Mustard, shredded cheese and chicken on the the next quarter of the tortilla and finally put the Swiss cheese on the last tortillas’ quarter. Then, fold each quarter taking care the filling keeps inside the tortilla.
  3. Grease a pan with butter or oil and add the tortillas until golden/brown. Flip and cook until cheese has melted completely.

HOW TO MAKE THE SPICY WHITE SALSA

It will take just 5 minutes to make this delicious white salsa to dip your quesadillas.

  • Mayonnaise
  • Plain yogurt or Greek yogurt
  • Chopped jalapeños
  • Cumin powder
  • Paprika
  • Garlic powder
  • Onion powder
  • Salt
  • Half of a juice lemon

TIPS:

*Be sure of having your stove to medium temperature. Otherwise, they tortillas will burn and the cheese won melt.

*Cut the tortilla with a sharp knife or a pizza cutter.

*Store any leftover wrapped in parchment paper or clear plastic wrap

*To reheat quesadillas, you can do it in low heat until they are warm enough.

Ingredients
  

Chicken quesadilla

  • 2 tbsp olive oil
  • 1 green onion
  • 1 white onion
  • 1 lb boneless skinless chicken breast
  • 2 garlic cloves chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp cayenne
  • 1 tsp cumin
  • 1 cup romaine lettuce
  • cup cilantro
  • ¼ cup pickles
  • ½ cup orange pepper or any other pepper
  • 1 tbsp mustard
  • cup red onion
  • ½ cup shredded Mozzarella cheese
  • 2 slices Swiss cheese

Spice White Salsa

  • 1 cup mayonnaise
  • 1 cup plain yogurt or Greek yogurt
  • 3 tbsp jalapeño chopped
  • 2 tbsp cumin powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 half lemon juice
  • 1 tsp salt

Instructions
 

  • In a small bowl, add the salt, black pepper, cayenne, cumin and mix well. This is to season our chicken.
  • In a pan, add the olive oil and fry the chicken with the green and white onion. Then, add the seasoning.
  • Meanwhile, cut all the veggies you will use in small pieces to fill the quesadillas.
  • To assemble, cut down from the center of the tortilla to the edge (see above photo). Spread in a quarter of the tortilla, romaine lettuce, cilantro, bell pepper, red onion, pickles. Then, spread on the top left corner some mustard and add the shredded mozzarella cheese and chicken on the top. And put the Swiss cheese on the top right corner (see photos for visuals). Fold the part of the tortilla that doesn't have ingredients over the veggies. Then, working clock-wise, folding that quarter over the chicken. And finally, fold that quarter over the cheese.
  • Drizzle some olive to a pan and add a tortilla. Cook 2-3 minutes until crisp and golden and until the cheese has melted.

Spice White Sauce

  • Add all the ingredients in a bowl and mix until everything is well combined.
  • Serve with warm chicken quesadillas.
