But before start it, what is hummus?

Hummus Origins

Hummus is Middle Eastern in origin and many cultures in that region claim hummus as their own cherished recipe.

Chickpeas were and are abundant in the Middle East and are still commonly eaten. In fact, the word hummus means chickpea in Arabic. Source

We can say with certitude, hummus has become a very popular dish thorough the world. Its creamy consistency provided by the cooked chickpeas + added flavors like: tahini, garlic, lemon and salt, makes it one of the favorite ones among the Mediterranean dishes.

HOW TO MAKE HUMMUS

Start with the chickpeas

Soak your dried chickpeas overnight or at least, 8 hours. If what you want is to save time you can use canned chickpeas, drain them and put them in the food processor with the rest of the ingredients. Another way to have your chickpeas ready to make hummus is adding some boiling water to those dried chickpeas and let them sit for one hour.

When your soaked chickpeas are ready to use, toss them in a pot and pour some water with baking soda. Let the water to boil and then, simmer for 30-40 minutes.

I personally, like to take time to prepare the chickpeas and keep the recipe super traditional because when they’re homemade from scratch, I think they always taste better.

Once your chickpeas are tender, drain and add them to a food processor and add the roasted garlic cloves, tahini, lemon juice and salt. Secret ingredient: Add some of that olive oil where you roasted your garlic. This is going to take your hummus to the next level!

Tip

If you have extra time and you want to make hummus that is extra creamy, peel the membranes off the cooked chickpeas before you purée them. One very easy way to do it, it’s once you’ve drained your chickpeas and let them cool down, pour cold water, get your hands in and rub them very gently without breaking them out. You’ll see the sells start to float.

You can enjoy this wonderful recipe with pita chips, pita bread, in a salad, you can put it in a burrito, in pasta.

Hummus is also wonderful as a dip for crackers or raw vegetables. There’s so many great things to do with hummus.
