Creamy Rosemary Chicken

This Creamy Rosemary Chicken is a very simple, flavorful and comforting recipe that only requires one pan to make. It’s a perfect meal for a cozy night in!

One thing that I’m passionate about is having close contact with food, cooking our own meal and adding ingredients that I know will nourish our body. This meal is no the exception because it’s rich in vitamin B6, high in good fats and protein. Moreover, rosemary has excellent anti-inflammatory, anti-oxidant and neuroprotective properties… This is good stuff!

Another thing that I like from this dish is, it doesn’t require many ingredients, and most are ones that you keep well-stocked anyway.

You can serve this Creamy Rosemary Chicken with a fresh lettuce salad or any other mixing salad like Orange-Quinua Simple Salad. You’ll get a great combination of flavors plus the benefits of this nutritional meal.

CREAMY ROSEMARY CHICKEN NOTES

As I already said, you’ll only need one pan to make this delicious recipe. That’s a piece of cake, right?!

Then, it just takes some minutes to fry the chicken (for this recipe we’ll be using chicken thighs) side to side to seal our meal for extra moisture and flavor.

Next, fry some diced onions and let all the juices come out until getting that translucent color. From here, the magic of flavors start. Put the chicken back into the pan and add chicken broth but if you don’t have any, adding water will help as well. Then, add wine to intensify the taste and moisture of chicken.

Don’t forget to add rosemary, this ingredient is essential to season our meat and take our dish to a different level. And what about adding salt and black pepper? Oh yes, please! Add also some Dijon mustard to give a bit of tang and spice flavor. For adding creaminess and thickness, you’ll only have to put some coconut cream, water and arrowroot flour. You’ll see how tasty it is!

Ingredients
  

  • 1 tbsp ghee
  • 1 lb chicken thighs
  • 1 onion diced
  • 1 cup chicken broth
  • 1 cup dry white wine
  • 1 tbsp Dijon Mustard
  • 1 tbsp fresh rosemary
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp coconut cream or unsweetened milk
  • 1 tsp arrowroot flour
  • 2 tsp water

Instructions
 

  • In a pan over medium heat, heat the tablespoons of ghee. Fry the chicken, for 3 minutes. Turn over and fry for another 3 minutes. Remove from the pan and set aside.
  • Fry the onion on the same pan you fried the chicken. Fry for 3 minutes.
  • Transfer the chicken back to the pan and add broth, wine, mustard, rosemary, salt and pepper.
  • Cover and simmer for 40 minutes or until the chicken is nearly falling of the bone.
  • Remove the chicken and place in a serving dish. Cover to keep warm.
  • Over high heat, boil the liquid remaining in the pan until reduced by half, about 10 minutes.
  • Remove form the heat and whisk in the coconut cream until fully dissolved.
  • In a small bowl, whisk the arrowroot flour and water. Slowly whisk the arrowroot slurry into the sauce to thicken it.
