Cozy Homemade Vegan Tomato Soup
This Cozy Homemade Vegan tomato soup is prepared with fresh tomatoes. It is a very easy and healthy meal. This soup is very creamy and DELICIOUS! Its flavor is so addictive that you will want more than a bowl!
This is one of my favorite cream soaps. It is heart warming and perfect for a cold day.😊 You can perfectly pair it with a classic grilled cheese sandwich. (I will be sharing my husband’s recipe on this post.) He makes delicious grilled cheese sandwiches. For this recipe he made one with regular cheese and bread and for me he made one with vegan cheese and flourless sprouted grain bread.
HOW TO MAKE COZY HOMEMADE VEGAN TOMATO SOUP
The ingredients that we need to make this vegan tomato soup are simple:
- Chop a half of a white onion in squares or chunks, cut the green onion in coins and mince the garlic. Dice three fresh tomatoes. I cleaned them previously with vinegar so I cut and let the skin.
- In a skillet, sautée all the veggies in olive oil for 10 min. After ten minutes add 2 cups of vegetable broth, salt, pepper and Italian seasoning. As an option, you can add 1 once of dried tomatoes. Let it simmer for 10 more minutes.
- Let the preparation cool for about 5 minutes and add it to your blender carefully. Pour 2 cups of unsweetened dairy-free milk (cashew milk, almond milk, coconut milk or oatmeal milk) and 1/4 teaspoon of granulated refined sugar-free sweetener or honey. Finally add some raw cashews and blend.
- Transfer the soup to a pot, taste it and see if it is necessary to add more salt, pepper or sweetener.
MY HUBBY’S GRILLED CHEESE SANDWICH RECIPE
This is a very simple recipe that only needs of 3 ingredients:
- Bread
- Butter
- Mozzarella or Cheddar cheese
HOW TO MAKE GRILLED CHEESE SANDWICH?
To make this delicious grilled cheese sandwich:
- Place a skillet over low to medium heat.
- Spread butter generously on one side of each slide of bread. (The secret here is to get the butter spread evenly all the way to the crust.)
- Put each slice of bread with the butter side down on the skillet.
- Add 2 or 3 pieces of cheese on one of the bread slices and cover with the other piece of bread, butter side faced up. Keep your heat on low to give the cheese time to melt completely while the bread is getting golden and crispy.
- Cut the sandwich in a half and serve with your Cozy Homemade Vegan Tomato Soup.
VEGAN AND GLUTEN-FREE SUBSTITUTIONS
You can vary the ingredients for your grilled cheese sandwich using vegan butter, cheese and a gluten-free flour if you prefer. To make it you have to follow the same procedure for the regular grilled cheese sandwich. I can tell you, It is delicious as well!!
Cozy Homemade Vegan Tomato Soup
Ingredients
- 2 tbsp olive oil
- ½ cup white onion
- ⅓ cup green onion
- 2 cups fresh diced tomatoes
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 tbsp sea salt
- ⅓ tsp Italian seasoning
- 1 oz dried tomato (optional)
- black pepper at taste
- 2 cups unsweetened dairy-free milk
- ¼ tbs granulated refined sugar-free or honey
- ½ cup raw cashews
Grilled Cheese Sandwich
- 2 slices of regular bread
- 2 tbsp unsalted butter
- 2 slices cheddar cheese or mozzarella cheese
Instructions
- Prepare your veggies chopping the white onion in squares or chunks, cutting the green onion in coins, mincing the garlic and dicing the tomatoes.
- In a skillet, put in olive oil. Add the white onion, green onion, garlic, diced tomatoes and cook for about 10 minutes in low/medium heat.
- After 10 minutes, add the vegetable broth, black pepper, salt and Italian seasoning. Cover it with a top and let it simmer for 10 more minutes.
- Let the preparation to cool down for 5 minutes and add it to your blender carefully. Pour in the unsweetened dairy-free milk and the refined sugar-free sweetener. Finally, add some raw cashews and blend.
- Transfer the soup into a pot and let simmer until warmed. Taste and adjust seasoning as needed.
- Garnish with fresh parsley or vegan parmesan cheese or croutons.
- You can storage your leftover in the fridge for 4-5 days.
Grilled Cheese Sandwich
- Place a skillet over low to medium heat.

- Put each slice of bread with the butter side down on the skillet.
- Add 2 or 3 pieces of cheese to the bread and cover with the other piece of bread, butter side up. Allow the cheese time to melt while the bread is getting golden and crispy.
