This Comfy Lentil Soup is hearty, nourishing and satisfying perfect for a chilly day. You only need one pot to make it!

I feel I’ve been on soup mode lately… You know, it’s the season when weather cools down and even though you love food, you prefer to cook something quick but still nutritious and budget friendly. I definitely like how that sounds!

I see you and understand you because I am just like you in these feelings, today I honor you (us?) with this super cozy, big-time healthy, easy to prepare soup.

All the ingredients are easily accessible, I’d be willing to guess you already have most of them in your pantry and fridge!

This recipe begins with lentils, which I recommend soaking.

Soaking helps improve speed cook time.

This recipe is using green lentils but if you’re in a rush, you still can use red lentils. They don’t require soaking and cook faster. You just need to keep an eye on them when cooking because if you leave them for so long, they can turn mushy which isn’t the aim for this recipe.

The rest to make this soup is easy:

  1. Sauté celery, carrots, onion, garlic and fresh herbs: thyme and rosemary. Let all those juices blend together Wow earthly flavor!
  2. Add vegetable broth, lentils, salt and black pepper and simmer until tender.
  3. Garnish with fresh herbs and enjoy!

FINAL TIPS

  • Adjust the consistency: Simply add more vegetable stock if you prefer a thinner lentil soup. For a creamier soup, set apart a cup of the lentil mixture and use an immersion blender/blender to puree as you’d like. Then add this back to the lentil soup.
  • Don’t skip the sauté steps: Doing this, it’ll infuse your soup with tons of flavor. The sauteing will lightly caramelize the veggies and enhance their sweetness and flavor.
  • Adjust the spices to taste: I always taste test the soup at the end and adjust any spices/seasonings.

Comfy Lentil Soup

Ingredients
  

  • 1 cup green lentils soak 6 hours or over night
  • 2 tbsp oil
  • 1 cup celery chopped
  • 1 cup carrots chopped
  • 1 cup white onion chopped
  • 2 garlic cloves minced
  • 1 string fresh rosemary
  • 1 string fresh thyme
  • ½ tsp turmeric powder
  • salt and pepper to taste
  • 7-8 cups vegetable broth

For Serving

  • fresh cilantro

Instructions
 

  • Heat oil in a LARGE pot over medium heat and add carrot, celery, onion, garlic, thyme and rosemary and sauté for 3 more minutes.
  • Add vegetable broth and raise the heat to high and bring to a boil. Once boiling reduce the heat to low. Add lentils, salt, pepper and turmeric powder. Stir to combine. cover, and reduce heat to a simmer for 30-35 minutes or until lentils are tender, stirring occasionally. (time will vary depending on type of lentil and whether or not they were soaked).
  • Serve as is, or over grains: quinoa, rice, faro. Top with fresh cilantro or any cream.
  • Store leftovers covered in the refrigerator up to 5-7 days or in the freezer up to 1 month. Reheat on the stove-top over medium heat until warmed through. Add more vegetable broth or water to re-hydrate as needed.

Notes

To cook this in an Instant Pot: With the iPot in the sauté setting, add a splash of oil to the pot with all the veggies and herbs. Sauté for 5 minutes. Add all of the remaining ingredients to the pot, seal it, and cook on Manual HIGH for 15-18 minutes.
