Ceviche is a very popular dish on the coast of Colombia but it’s also enjoyed along all the country. It can be made with fish or octopus as well. Many people like to consume it raw, however we’ll heat the shrimps just the right amount for keeping their texture and flavor.

Moreover, this recipe is very, very simple and quickly to make, few ingredients. Ta-ra!

Oh, I love how it sounds! Sometimes, I find short of time to cook and have to think on something that I know will be a winner! So, shrimp ceviche is in my savor time menu!

INDREDIENTS

  • Shrimps (peeled and deveined): I used wild caught shrimps but you can use any other shrimp you want. However, for food safety, if using raw shrimps, be sure you get them from a trusted source.
  • Red onion
  • Fresh garlic
  • Lime juice (fresh)
  • Fresh cilantro
  • Tomato sauce
  • Mayonnaise
  • salt and black pepper
  • Hot sauce (optional) for spicy lovers

WAYS TO COOK SHRIMPS

  1. If you want to cook your shrimps, fill a pot with water and add salt. Bring the water to boil, add the shrimp, and then immediately take the pot off of the heat. Leave the shrimp in the poaching liquid until just cooked through, 2 to 3 minutes. Then, drain immediately.

2. Put the peeled shrimps in a large bowl and stir in 1 cup of fresh squeeze lemon juice. Refrigerate and marinate for 1 1/2 hour. Marinating shrimp in fresh lemon juice essential cooks the shrimp due to the high acidity of it.

HOW TO MAKE CEVICHE

Once you have cooked the shrimps, dice the veggies: red onion, garlic and cilantro. Then, toss them in a bowl with tomato sauce, mayonnaise and mix. Add salt and black pepper to taste. Finally, toss the shrimps until they are completely covered with the mixture.

HOW TO SERVE CEVICHE

  • You can serve it in avocado halves and with saltine crackers or any other crackers you have in your pantry.
  • With plantain chips
  • Tortillas
  • In a cup of glass with crackers

Ingredients
  

  • 1 lb shrimps cooked or raw, peeled and deveined
  • ½ red onion
  • 1 garlic clove
  • ¼ bunch of cilantro cut
  • 1 lemon juice
  • ½ cup tomato sauce
  • cup mayonnaise
  • salt and pepper to taste

Instructions
 

  • Fill a pot with water and add salt to taste. Bring the water to boil add the shrimps and remove the pot from the heat. Let the shrimps rest for 2-3 minutes. After this time, drain the shrimps and let them cool down.
  • Cut the veggies: red onion, garlic clove and cilantro and pour them in a bowl with tomato sauce, mayonnaise and one lemon juice (fresh), mix well until combined. Add salt and black pepper to taste.
  • Toss the shrimps in the mixture and stir well. Allow the shrimp to marinade in the juice for 15 minutes.
