What Is Arequipe or Dulce the Leche?

Arequipe or dulce de leche is a thickened caramel you can get when cooking milk and sugar for a couple of hours. The process of heating the milk, evaporates the water and and slowly browns the protein finds in it, leaving a sweet and thick substance that gets like the consistency of smooth peanut butter.

It’s traditional to make arequipe or dulce de leche on the stovetop but there’re are other ways to make dulce the leche to reduce the cooking time. We’ve inspired on this typical Latin treat and twisted a bit to get this delicious sweet in 15 minutes.

How to make arequipe-dulce de leche

Everything starts by stirring coconut sugar and adding butter. It’ll give structure and provide a smooth texture to the dulce de leche.

The rest is pretty straightforward!

FINAL TIPS

  • Stir constantly while adding all the ingredient to avoid the mixture burns.
  • You’ll know the dulce de leche is ready when you’re able to see the bottom of the saucepan when stirring.
  • Cook in low temperature to allow the ingredients cook well without burning.
  • Let cool down and refrigerate.
  • Your dulce de leche will last about two weeks in the fridge if kept in a sealed container.
  • To use it, let it take room temperature before.

Ingredients
  

  • ¼ cup coconut sugar or cane sugar
  • 3 tbsp butter room temperature
  • cup whole milk hot
  • 14 oz sweetened condensed milk

Instructions
 

  • Place the coconut sugar in a skillet or non-stick saucepan. Add the butter, stirring after addition.
  • Pour the milk, a bit at a time, stirring after each addition, until the caramel is completely liquid.
  • Add the condensed milk. (Here is one sugar-free recipe). Stirring constantly, bring to boil and stir for about 5 minutes or until thickened.
  • Store the arequipe or dulce de leche in an airtight container at room temperature for up 3 days or refrigerate for up 2 weeks. Remove from the fridge about 30 minutes before of using it.

Notes

  • Don’t use cream or regular milk in place of condensed milk, or you’ll end up with a thin caramel sauce instead of arequipe or dulce de leche.
  • For a smoother texture, stir constantly and scraping the sides of the skillet or saucepan.
