Refreshing Coconut Lemonade
This Refreshing Coconut Lemonade is the ultimate creamy, cold, sweet, tangy drink. You’ll just need four ingredients and it’s quick to make in five minutes.
Now that we’re getting nicer days to be outside and enjoy the beautiful colors around us, gathering with friends or family while tasting a good drink, a Colombian one. YAY!
Right from your first sip, this coconut lemonade will transport you to Colombia’s tropical Caribbean Coast where you’ll find beautiful beaches to swim in clear water and light sand to walk through.
Back to the recipe, you can delight of this one as a refreshing drink or you also can make it a cocktail, adding 2 oz (60ml) of vodka, rum or tequila.
INGREDIENTS FOR MAKING THIS REFRESHING COCONUT LEMONADE.
- 1 can of full-fat coconut milk
- Condensed milk ( made my dairy-free version that I describe below this page, in the recipe card)
- Juices of 5 lemons
- 2 cups of ice
In addition, the coconut milk adds healthy fats and gives it that tropical vibe, and the lemon juice adds the zesty flavor which is balanced out by the sweetness from the condensed milk. Yum! A heavenly drink!

Refreshing Coconut Lemonade
Ingredients
- 1 can full-fat coconut milk
- 1 cup condensed milk
- 4 lemon juice
- 2 cups cubes ice
vegan condensed milk
- 4 cups coconut milk
- ½ cup monk-fruit
- ½ cup erythritol
- ¼ tsp arrowroot flour only if you want it thicker
Instructions
Vegan condensed milk with alternative sweetener
- In a pot in medium heat, bring all the ingredients to boil. Reduce the heat to low and leave it for 45 minutes. Stir every 5minutes or so. Then let it cool down and fridge.
Coconut Lemonade
- Grate a piece of coconut or use flaked coconut. Place the coconut on a plate and condensed milk on different one.
- Wet the rim of the glasses in the condense milk and then dip them into the grated coconut.
- Pour the ice, coconut milk, condensed milk, lemon juice in the blender until the ice has broken down. If you want to make this drink a cocktail, you can add to the mix 2 oz (60 ml) of vodka, tequila or rum.
- Transfer to the decorated glasses and garnish with lime wedges. Enjoy!
Sounds yummy but to much sugar a cup of Monk fruit sugar and another of erytritol mix sweetener is too much. . confused by the amount of cooking time 45 min to make the condensed coconut milk??

Sorry for the confusion… A cup would be for the two sweeteners combined.
It would be 1/2 cup Monk fruit.
And 1/2 cup erytritol.
I used Lakanto which combines both Monk fruit and erytritol, so if using Lakanto its 1 cup.
Yes it does take 45 min to make the condensed coconut milk. The reason being is that we need to reduce the water content from the coconut milk by 1/2, as we seek a thick and gloppy mixture.
