Ingredients

Cherry Syrup

  • ½ cup cherries frozen or fresh, organic if possible
  • 1 cup water
  • 2 tbsp fresh ginger finely chopped
  • 2 tbsp fresh mint
  • ¼ cup lemon juice
  • 1 tbsp coconut sugar

Mocktail

  • pomegranate ice cubes You can previously freeze
  • ½ cup cherry syrup
  • cup pomegranate juice
  • ¼ cup sparkling water or soda water I used Wild cherry flavored (optional)

Instructions

  • Cherry syrup: In a small saucepan, combine water, cherries, mint, ginger, coconut sugar and lemon juice. Bring to boil, then cover and simmer for 20 minutes, until the cherries have lost most of their color and the mixture is dark and fragrant.
  • Strain the cherries mixture into a measuring cup or jar. Then, stir to combine and set aside to cool slightly.
  • Mocktail: When you’re ready to serve, add ice (I made pomegranate ice and topped with mint leaves) to your drinking glasses and top with 1/2 cup cherry syrup. Top each with ~1/3 cup pomegranate juice and 1/4 cup sparkling water, plus more cherry syrup for sweetness or sparkling water to taste. Stir to combine, and enjoy! Garnish with some cherries and mint leaves (optional)
  • Any leftover syrup can be stored in the refrigerator for up to 1 week or frozen in an ice cube tray then transferred to a sealed container for up to 1 month.

Notes

  • For a boozy twist, you could sub champagne or vodka in place of sparkling water.
  • Feel free to use flavored water/seltzer (like La Croix or Spindrift). Or, you can swap in ginger ale or ginger beer instead!
  • Personally I find that thawed frozen cherries work better for this mocktail as they are softer to muddle, and have released some of their juices.
  • If you aren’t a fan of mint, you can always use thyme leaves or rosemary as an alternative.
  • Use 100% pomegranate juice, if possible to get all the fruit benefits.
  • Freeze pomegranate ice cubes for a fancy garnish.
