Healthy Chocolate Cake Recipe

This healthy chocolate cake recipe is made with gluten-free flour, vegan butter and has been sweetened with coconut sugar. It is a very yummy and alternative dessert that wont leave any space for regrets!

This super easy healthy treat will satisfy your Chocolate craving! After all, you might just need a slice of cake for no reason. Especially, if it involves our star ingredient. 🍫

INGREDIENTS YOU NEED

  1. Gluten-Free flour: Look for one that is a flour blend (rice flour, tapioca or xanthan gum, potato flour. Gluten Free All Purpose Flour would be also a good choice.
  2. Vegan Butter: You can use one of your preference, just remember it needs to be room temperature. You also can use coconut oil. I use the solid one, room temperature.
  3. Sweetener: In my baking I prefer to use alternative, non refined sugar that provides good nutrients to my recipes. For this recipe I decided to use a natural sweetener: Coconut Sugar. This sweetener retains all its vitamins and minerals, and it doesn’t cause fluctuations in blood sugar. Plus, coconut sugar pairs excellent with chocolate desserts because of its caramel flavor.
  4. Eggs: You need the eggs at room temperature. For this recipe, you will need three eggs; beat one egg apart from the other two and use only the egg whites.
  5. Milk: Use the milk of your preference. I used oatmeal milk for this recipe.
  6. Cocoa powder: Try to use one of good quality, That will make a difference on taste!
  7. Warm water: That will bring out a more intense chocolate flavor.

HOW TO MAKE THE HEALTHIEST CHOCOLATE CAKE

  1. Wet Ingredients: Mix the butter and sugar together, add the egg whites and then the beaten egg. Add the vanilla extract.

2. Dry Ingredients: Whisk together flour, cocoa, baking powder and salt. Mix the dry ingredients together so they evenly disperse.

3. Mix the Wet and Dry ingredients: With a rubber or silicone spatula, blend the wet and dry ingredients, add the milk gradually and add the warm water at the end. Mix all the ingredients together until it turns into a light batter.

4. Lining a Cake Pan: To prevent your cake from sticking to the cake pan and to provide a clean surface inside your pan, it is always advisable to line your cake pan with parchment paper.

Healthy Chocolate Cake

This tasty Chocolate Cake is super healthy and deli. I use a 6 inch cake pan and cut in a half to make layers. This is a perfect size for a small gathering.

Equipment

  • 1 6 inch cake pan
  • 1 Mixer

Ingredients
  

  • 1 1/3 cup (6oz) Gluten Free Flour
  • 1/2 cup (40g) chocolate powder
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cup (250g) coconut Sugar
  • 1 large egg
  • 2 egg whites
  • 1/2 cup (4oz) oatmeal milk
  • 1/4 (2oz) warm water

Instructions
 

  • Preheat oven to 350°F. Butter a 6" (15cm)
  • In a medium bowl, whisk the cake flour, baking powder, chocolate powder and salt.
  • In a bowl, mix the softened butter and sugar for 5 minutes until it is fluffy.
  • Slowly, add the egg whites and then the beaten egg until mixture is combined well.
  • Using a spatula, mix the dry and wet ingredients slowly until they are slightly absorbed into the mixture. Then, add the milk in 1/4 cup increments and mix on medium speed to incorporate air into the mixture. Continue adding the remaining milk.
  • Add the warm water and until it is absorbed into the mixture. The batter will be light when completed.
  • Pour the batter into a 6 inch cake pan, lined by parchment paper. See on the top, HOW TO MAKE THE HEALTHIEST CHOCOLATE CAKE session.
  • Let it sit for 5 minutes before putting it in the oven.
  • Bake for 35-40 minutes until the center has risen into a nice dome or try the classic cake toothpick test!
  • Let the cake cool down for 15 minutes.
  • Cut the cake in two layers. (optional)
  • Spread a jam of your preference. .
  • Decorate the top with some garnish. I used my Medley Jam recipe (subscribe to receive this delicious homemade jam). and my Yummy Neufchatel Cream Frosting some cranberries and sprigs of rosemary. (optional)

Notes

RECIPE NOTES
  • Let the cake cool down for 20 minutes before decorating.
  • If you have an electric oven you can leave your cake for 40 minutes and a toothpick should come out with moist crumbs. If you have a gas oven, leave the cake for 35 minutes. It is good to have an oven thermometer to be sure the internal temperature of your oven is matching with the setting dial.
